Most Thai food cooked outside Thailand has been adjusted on the way over: the chili reduced, the sour and the salt rounded off, the fish sauce held back until the dish is something else with the same name. Chef Anna starts from the other end, with each dish balanced the way it is at home, and adjusts from there for your guests. That balance is the point of the dish, and it is the version you cannot get anywhere else.
Her cooking is rooted in Nakorn Si Thamarat, her home town on the Gulf coast of southern Thailand. For centuries the region sat on the sea routes between India, China and the Malay world, and its food carries that traffic: turmeric and dried spice from the west, seafood from a long coastline, and a wider range of curries than most people know. Sour Curry (Gaeng Som) runs hotter and sharper than anything from Bangkok, and Southern Fish Curry (Gaeng Tai Pla) is the saltiest dish on any Thai table. The same coast makes Massaman, slow and mild, and the Peanut Curry (Panang) on our wedding menu.
